Let's get started with my favorite go-to sauce for pasta.
Serves 4
Ingredients
1lb favorite pasta
3Tbsp butter
3/4C freshly grated parmesan cheese
1/3C freshly grated pecorino (or substitute more parmesan)
1tsp ground black pepper
1tsp minced chives
How to
1. Boil your salted water and cook your pasta until al dente (about 6 minutes), drain but reserve 3/4C of your pasta water.
2. Melt 2Tbsp butter in a large skillet, and toast the pepper slightly in the butter.
3. Add your pasta and the pasta water and bring to a boil.
4. Add remaining butter and all of the cheese and incorporate until all of the cheese is melted.
5. Serve garnished with the chives and enjoy!
